Cajun Rice Dressing
One of my favorite all time receipts is Cajun Rice dressing. The receipt follows. Ingredients: 1 package of Jimmy Dean Hot sausage 1 cup celery 1 cup onions 1 cup green bell pepper 2 Tbls olive oil 2 cups of rice Preparation In a medium size pot prepare the rice, 2 cups of rice and 4 cups of water. Add a tablespoon of oil and a teaspoon of salt. Bring the water to a boil and then turn down the heat to medium. I never strir my rice, some do and it seems to turn out alright. I prefer to let the rice, water and pot do its own thing and I usually get good results. In a skillet, put a small amount of oil (Olive oil preferably) , Add the sausage. Brown thoroughly, then add the onions, celery[..]
New Orleans Recipes - Shrimp Creole
This is another favorite New Orleans recipe. Now don't be intimidated by these recipes. I have given you the NO Fail Roux recipe earlier in an Ezine article if you want to use that. All you have to know how to do to cook most of these dishes that we make in New Orleans is how to fry the vegetables and seasoning in the oil. Come on now if you can fry an egg or fry bacon you can surely do that. You can even buy the creole seasonings already chopped at your supermarket. I must confess that that is what I do now. It is so easy and saves all that chopping and cutting. So brown your flour ahead of time in a no stick pan or if you are a big cook, prepare 5 lbs ahead of time like my mother in[..]
Although we grill a few steaks, here and there, I would say that grilling chicken has a tremendous priority because it is lean, taste super good and probably better for you than any type of red meat. Personally, I grill only chicken breasts. You can grill cutup chicken parts, but I like to barbecue and slow-cook whole chickens on indirect heat. It is just easier and comes out better and more moist than grilling chicken parts. I grill chicken breasts all year around, and I use the barbecue to do so. Outdoor grilling just gives meat an extra and pronounced taste that's hard to beat. I always use frozen chicken breasts. In my neck of the woods, you can always find them on sale. You can use[..]
Grilling Chicken
Grilling chicken can either be a challenge or an amazing success, dependent upon a couple of variables. One is using a brine solution and the other is grilling over indirect heat. And Fall is my favorite time to cook outside. The weather is beautiful...not raining as often as spring, and the heat isn't the blast furnace that summer often is. Here's how I made my last chicken on the grill. I started with 6 leg and thigh sections. I created a brine solution made of enough water to cover the chicken and about a 1/4 cup of salt. Then I immersed the chicken in the solution and put the container in the refrigerator overnight. The following morning, I drained the chicken and patted it dry. In[..]
Tips For Grilling Chicken - Exactly How to Get...
Before you can really serve up a tasty poultry dish the right way, you need a few tips for grilling chicken. The trick? Start with the fire. Your fire is the beginning of the grilling process. Without a proper fire, you can not expect great results. And don't for a second think this does not apply to you gas grillers! It does! How Many Briquettes? As a general rule of thumb, plan on using about 30 briquettes to cook 1 pound of meat. A standard five-pound bag contains 75 to 90 briquettes. You want to make sure that you have enough briquettes to cover the grills pan in a single layer and extending out about 2" beyond the area of the food on the grill. The first step is to place the[..]

Chicken wings are an often overlooked part of the chicken given their lack of meat content however, there is nothing better than succulent and juicy chicken wings coated and baked in the oven, grill or BBQ. In fact, if you purchase a large chicken and detach the wings from the carcass you will have some fairly 'meaty' wings which are an excellent cut perfect for the BBQ given their quick cooking times. But just how to to grill them perfectly? Grilling chicken enables the fat to drain off and delivers you a delicate, crisp wing lacking excess fat. The true test in grilling chicken wings is the inevitable flare ups and burning. However, to resolve this, keep your grill to a medium[..]
Healthy Chicken Recipes - One of the Best...
I second that 'emotion.' There is nothing wrong with healthy chicken recipes. Chicken is one of my favorite things to eat. Sometimes we have chicken so many times in a row, week after week that my wife will complain that she is tired of eating chicken. I don't see how that can be, but that's alright; to each their own. An Introduction to Jambalaya Cuisine
What is Jambalaya cuisine and where does it come from? Jambalaya cuisine is highly versatile Creole-Cajun style of cooking popular these days in the South. Jambalaya is a one-pot dish cooked in cast iron Jambalaya pots or Dutch ovens. Theories abound regarding the origins of the cuisine many linked to the names of the dishes as they have come down through time. What is clear though, is that cooking Jambalaya is more of an art form than a science and its now become firmly ensconced as part of our cuisine heritage. But know this, Jambalaya isn't Jambalaya if it isn't cooked within the traditional cast iron Jambalaya pots or Dutch ovens. Some suggest that the name Jambalaya comes from the[..]
When you talk about Cajun cuisine, I'm sure you have probably heard the word Gumbo. But have you ever wondered what gumbo is? The word gumbo literally means Okra. The French settlers in the Louisiana territory had trouble finding their usual ingredients for their French dishes so they substituted with the common local ingredients. These were mainly, fish, okra and shrimp. Gumbo consists of two basic ingredients. These ingredients are rice and broth. The rice used in gumbo is traditionally white rice that is steamed or boiled. A touch of salt and/or vinegar may be added for flavor. The broth for gumbo is where the differences come in. Broth may be made from a variety of things. A very[..]
Recipes For Cooking Squirrel - General Info
The taste of the squirrel meat is great if prepared the right way. The hunting of a squirrel should be done with a .22 rifle or a shotgun loaded with rat shot or bird shot, or even using a pellet rifle. Depending upon how you like your squirrel, there are various methods you could try. No matter which technique you choose, soak the meat in a sealed bag with buttermilk in your refrigerator. Leave it overnight. In the morning, pan-fry the squirrel meat. Bread it with a mix of salt & pepper, flour and whatever seasoning you enjoy using on wild meat. Fry the meat until it is completely done. Be careful not to fry it too long because it will become very dry, losing its tasty properties. After[..]
How Long Do You Bake Chicken Leg Quarters?
Chicken leg quarters are a great cut of chicken having a slightly more moist and succulent area of meat than the breast meat. But just how long to you bake chicken leg quarters for? Given the legs have a much smaller surface area to cook once detached from the whole chicken, the cooking time is drastically reduced. For an average sized pair of chicken legs you will expect to roast them for around 45 to 50 minutes in a hot oven around 220 degrees. Why not make up a home made chicken seasoning to coat your roast chicken legs and give them that extra spice? Below is one of my favourite chicken seasoning recipes which derives from a Creole/Cajun source and is quick, easy and in most cases[..]

Authentic Gumbo: It's All About the Roux
Traditional southern cooks will tell you that a cast iron pot makes the best Gumbo. It allows the roux to cook slow and easy and turn a deep chocolate brown; some might say black, but I beg to differ. If your roux is black, it is burned and you really don’t want to use burned roux in your Gumbo. There are a number of stories centered on what Gumbo is and how it originated. What we know for sure is the word Gumbo or Gumba as some might say in Africa is from a Central Bantu word that means okra. Okra, also called lady fingers is a long green pod full of seeds, used to thicken soups and stews. There has not been a time in my life when gumbo was not a part of my daily existence. The[..]
